Night Class Margherita Pizza


I've enjoyed my graduate school experience thus far except for the fact that the majority of the classes happen during peak eating hours around (5-9 pm).  Being in class till 9pm basically throws my eating schedule out of whack and has probably contributed to the extra "love" around my butt area.  So, to keep this long complaint ridden story short, late class=no time=easy dinner.  I have a love-hate relationship with fast food restaurants, so basically I try to stay away from them and instead opt to prepare an easy meal ahead of time and heat it up when I get home ie: Margherita Pizza.  It's cheap,delicious, and it could probably feed you for a few more days, because it is still just as good heated up as the day before.  So here it is, " Night Class" Margherita Pizza. 


Ingredients-
  • 1/8 cup extra virgin olive oil
  • 1/2 tablespoon of crushed or finely minced garlic (trader joe's offers a cheap ready made jar of this stuff)
  • 1/4 tsp salt
  • 1 thinly sliced Roma tomato
  • 2 cups shredded Mozzarella cheese
  • 1 package Pillsbury thin crust pizza dough "hoo hoo" or any other brand you prefer
  • cooked ground italian sausage (I used about half a tube package)
  • a few basil leaves (adjusted to your taste) and cut into thin ribbons
  • 8 oz can of tomato sauce (you won't use all of it, so just refrigerate any left over sauce for another day)
  • Red pepper flakes (to taste)

Directions-
  1. Combine olive oil, garlic, and salt in a bowl. toss in tomatoes, and let it sit for about 15 minutes.  Preheat your oven to 400 degrees F.  
  2. Lightly brush the pizza crust with the marinade used above. Roll the edges of the dough once in order to create a crust and a barrier for the cheese and sauces.
  3. Drizzle a thin layer of tomato sauce over the pizza crust being careful not to drench it or else your crust will be a soggy mess.
  4. Sprinkle the mozzarella cheese evenly onto the pizza and arrange the tomatoes on top.  
  5. Sprinkle the sausage, basil ribbons, and red pepper flakes 
  6. Bake for about 9-10 minutes until crust is golden brown and cheese is bubbly.
